Cheeses consisting of Vermont Sharp White Cheddar, Smoked Gouda, Dill
Havarti,
Imported Brie and Jalapeno Pepper Jack. Four types of
crackers. Roasted Red Pepper
Hummus and Tabouleh with wedges of Pita Bread.

Fresh Russet Potatoes grated and cooked to
a golden brown and topped with Sour Cream
and Smoked Nova Scotia Salmon.

and crackers pan sautéed and served with a Double Mustard

Chops with Fresh Herbed Crust
Baby Lamb Chops with a crust of Fresh
Bread Crumbs, Dijon Mustard, Rosemary,
and Garlic.
- Beef Wellington with Duxelle
Tender
chunks of choice tenderloin with a blend of Wild Mushroom and herb
fillings wrapped in a golden brown puff pastry.
- Mushroom Walnut Profiteroles
A blend of wild mushrooms and walnuts sautéed with fresh herbs. Served in a pate
choux pastry shell.
- Scallops with Bacon & Pineapple
New England Sea scallops wrapped in lean
smoked bacon and garnished with a Pineapple
wedge. Served on a
skewer.
- Iced Bowls of Cocktail Shrimp
Large cooked Shrimp served with a
Horseradish Cocktail Sauce and wedges of lemon.
Salad
Station
- Caesar & Salad of Gourmet Greens
Fresh California
Romaine tossed with our own signature dressing, garlic croutons, and
freshly
grated parmesan cheese. Served tableside with a mix of gourmet
greens. This makes a very
colorful and popular station. The salad is garnished with tomato,
cucumber, mandarin orange,
pistachio nuts, & dried cranberries.
- Buffalo Mozzarella & Tomato with Fresh Basil
A combination of
light rye, dark rye, marble rye, scala, and French baguettes. Served with
caramelized onion butter and regular butter.
Pasta
Station
Fresh baguettes laced
with garlic butter and toasted.
- Variety of Pastas
& Sauces
A station themed
& displayed with attractive props to reflect the style of the
station. A choice
of Pastas include Lobster Ravioli, Butternut Squash Ravioli, Tuscan
Ravioli, Three Cheese
Ravioli, & plain pastas such as Gemelli, Penne, Linguine, and
Farfalle. Sauces of Marscapone
sage cream sauce, tomato basil cream sauce, puttanesca, roasted red
pepper pesto and others.
Carving
Station
- Roasted Tenderloin of Beef
Choice tenderloin of
beef seasoned with garlic, and herbs, slow roasted to a medium rare and
carved tableside for your guests. Served with your choice of béarnaise, dijonaisse, bourbon
mustard, mushroom Madeira, horseradish cream, or aus jus.
- Lemon Chicken with Cognac Crème
Fraiche
Tender breast meat
marinated in lemon juice and then dredged through flour &
herbs. Then
sautéed slightly for a
golden color and garnished with a sprinkling of light brown sugar and
lemon zest. Served with a cool Cognac Crème Fraiche.

Vegetables
- Marinated Grilled Vegetables
Fire roasted peppers,
zucchini, eggplant, summer
squash, red onions and corn. Marinated
with extra virgin olive oil, fresh basil, and roasted garlic
vinaigrette.
- Roasted Potatoes
with Herbs & Garlic
Red bliss potatoes
oven roasted with garlic, fresh herbs, and extra virgin olive oil.

Desserts
Ice cream with a
variety of sauces including strawberries, hot fudge, & whipped
cream.
A cascading fountain
of milk chocolate will certainly be the talk of the party. German
waffles,
European style pastries, and fresh sliced fruits are just some of the
delicious treats used for dipping.
